Sustainability

Katherine Jauncey Culinary is proud to be a sustainable business. We repurpose, recycle, reuse and compost. All our produce comes without packaging and we don't use pesticides or chemicals on any of the produce we grow ourselves. We engage in sustainable and ethical growing and foraging practices and work with suppliers and stockists who share that ethos.

Packaging

My products are packaged in the most sustainable way possible using glass, card, cork and paper. I work with suppliers who are committed to sustainability in their own businesses. All of the packaging from glass jars to card cake boxes, paper labels and anti-tamper seals to natural cork bottle stoppers, as well as the wrapping and ribbons from my gift hampers are reusable and recyclable or biodegradable.

Produce

All the produce that I use is sourced in season on island. The majority is locally grown, and much of that saved from food waste. I am fortunate to be gifted surplus fruit and to be allowed to clear hazardous fallen fruit and keep it for my use. Myself and my family also grow some of our fruit and vegetables. All the imported produce I use is surplus or cosmetically imperfect. In all areas I strive to use only the highest quality ingredients while remaining true to my environmentalist ethos.

Glass Jars

All of my preseves come in glass jars manufactured in the United Kingdom using predominatlly recycled glass. As well as being widely recycled, when glass is left in the natural environment it is less likely to cause pollution than plastic. Unlike plastics, which break down into microplastics that can leach into our soils and water, glass is non-toxic. Silica Dioxide makes up 59% of the Earth's crust; Since it is a natural compound, there is no concern about leaching or environmental degradation.

No colourants are added and each jar itself is 100% recyclable and resuable, you can even sell them back to me to be washed, UV sterilised and reused. The lids are recyclable metal and where an internal seal or barrier is required, I use wax paper, not plastic.

Jar Buy-Back Scheme

As well as reusing both jar and lid in your own home, you may sell clean jars back and bottles back to me for use with new lids.

There remains a key problem with glass recycling, that it does not eradicate the remelting process, which is the most energy intensive part of glass production. It accounts for 75% of the energy consumption during production. Reusing glass containers, however, bypasses waste production altogether. Because glass is non-toxic there are also no environmental or health concerns associated with repeated use of glass containers.

All jars that I buy back are washed and then fan dried and treated with ultraviolet germicidal irradiation within a UV steriliser.
